Tri-Flakes Granola - Breakfast!

Breakfast has to be whole grain and filling..  We definitely don't want to compromise on eating a healthy morning meal.   Muesli was one of the favorite items that we get for breakfast when we were in Germany!  I had no idea about baking that time.   I was surprised to find out how simple it was to make it yourself.  It gives me the flexibility of adding some things to make it more healthier.    We can get away from the cheap sweetner and fake flavorings!   I love the natural coconut oil flavor on our granola topped with a dash of cinnamon. 

What you need?


Oats Flakes - 1 cup
Barley Flakes - 1 cup
Rye Flakes - 1 cup
Nuts of choice - 1 cup . (Almond slices)
Seeds of choice - 1 cup (Raw Pumpkin/Raw Sunflower)
Coconut oil - 1/3 cup
Maple Syrup - 1/3 cup
Cinnamon - 1/2 tsp





How to make?

Bring all liquids to room temperature especially coconut oil should be liquid before mixing.

Stir coconut oil, maple syrup and cinnamon

In a wide bowl, add all the flakes, pumpkin/sunflower seeds and almond slices and combine well with the mixed liquid

Spread evenly in the baking dish 9x13 works for this quantity. 

Preheat oven to 300 F in convect mode if available to help with even heating and place the tray in the center.    

It takes about 45 mins (watch for first few times to gauge the performance of your oven and adjust the timing).  I keep timer for every 15 mins and stir with a long spatula with gloves on my hand and turn the glass dishes around to get an even roasting

We like it roasted so I leave the dishes on the oven even after turning off.   You can drizzle honey while it's still hot and toss them together for the extra sweetness and all the health benefits of the honey.  Please remember that it's not advisable to cook with honey.

Once cooled, I add some whole almonds and raisins and store it in airtight container.

Enjoy with Chia Gel and Milk or on top of Smoothie/Porridge.   My kids eat it as a snack too.
