Whole Kamut Wheat pizza with Flax!

I have definitely come a long way in making pizzas, yes, whole grain super soft with a great texture and tastes really good!   My testaments are none other than my kids!












What you need?
Kamut/Regular whole wheat flour 2 cups
instant yeast 2 tsp
Sugar/Jaggery - 1 tsp
salt - 3/4 tsp
warm water (or a bit more)- 1 cup
ground flax seeds(Flax meal) - 2 Tbsp

For Sauce:
Oil - 2 Tbsp
Tomato paste (can) - 1 or pureed tomatoes - about 6 medium
Onion -1
Italian seasoning - 1tsp
Pepper and salt to taste
How to make?
  • In a large bowl mix all the ingredients except water
  • Knead with warm water for 5 mins till everything comes together, adjust water by adding 1 tbsp at a time.
  • Cover and let the dough rest for 10 min
  • Lets prepare the sauce now
    • Chop onion fine and puree tomato if you dont have the thick tomato paste
    • In the cooktop, heat the pan and add 2 Tbsp of oil
    • Crush the italian seasoning between your palm and then add pepper powder
    • Now add the onion and salt,  let it become translucent.   Add pureed tomato and let it thicken,  It should be in a spreading consistency, not too runny.   
  • Preheat oven to 450F.
  • I use 12 inch pizza pan,  You can use 8/9 inch cake pan or any other baking dish that you may have.  Dust your pan with some flour
  • Punch down the dough little bit and dust your counter top with some flour. Shape your dough in the counter according to your pan size and gently transfer it
  • Spread the tomato sauce gently and add your favorite toppings (I used onion, garlic, potato, peas, olives), then cheese, and put in oven for 15-20 minutes depending upon your oven).  Mine gets done in 15 mins.
Use a spatula to lift them slightly to check if it has browned at the bottom after 13 mins, Move the pie plate closer to the top rack for the rest of 2-3 mins so that the cheese would brown up little bit.
