Masala Peanuts!



Typically snacks has the most calories.  I try to make snacks as much as possible to pack for after school/office since all of us have some snack in the evening.   We have control over the ingredients when we make it at home

My kids love the deep fried masala peanuts and they do taste awesome.  We make them once in a while but wanted to try the oven roasted and to my surprise it was very good!

What you need?

Peanuts - 5 cups
Coconut oil - 1/4 cup
Red chilli powder - 1 Tbsp
Turmeric - 1/2 tsp
chickpea flour - 1/2 cup
Water - 1/4 cup 
spices (optional) 
    garlic powder 1/2 tsp 
    cumin powder 1/4 tsp
Salt to taste

How to make?

In a small bowl, mix oil, water,  chickpea flour salt, spices, turmeric and red chilli powder thoroughly without any lumps.  It should not be runny or too thick.  


In another big bowl,  add the peanuts and pour the liquid mixture on top of this and toss it gently see all the peanuts are coated evenly.   

Preheat oven to 325F.   Spread it evenly in a large baking tray and bake in the middle rack

Bake for about 20 mins and turn around the sheet.

Bake for another 10-15 mins, keep an eye after 10 mins to make sure they dont burn.

Enjoy Crunchy peanut snack.

If your Oven is calibrated well, then bake at 300F and keep it little longer if needed rather than ending up with burnt peanuts:
