Pan Focaccia

Focaccia looks like a thin sponge topped with some veggies and it has to be baked in the Oven and needs good resting time before baking.  So it can't be made in the morning.  We happen to try this Pan Focaccia in one of the stores and I thought this could be easily made.    I tried few times to get it right.    It was easy to make and kids loved it for their lunch.



What you need?

Spelt Flour - 2 cups
Butter milk - 1 cupa
Yeast - 2 tsp
salt - 1tsp
sugar -1 tsp

Topping - Olives, Jalapeno, cranberries

Dressing:

Olive oil - 1 Tbsp
Org Apple Cider Vinegar - 1 Tbsp
Salt/Pepper to taste


How to make ?

  1. Activate yeast in a 1/4 cup of warm water.  Water should be quite warm and add sugar before adding the yeast.   Yeast should make froth in 5 mins, Proceed with rest of the step
  2. Add butter milk slowly and make normal dough, it should not be too stiff. Let it rest for 15-20 mins
  3. Roll it into 5-6 inches thick circle and cook it over iron skillet on medium heat.   Brush the skillet with few drops of oil before.  
  4. Add any topping over the focaccia.    Press it gently with the back of the laddle.
  5. Cook well on both sides and let it cool
  6. Whisk the ingredients mentioned under dressing and brush them over the Focaccia.   
I added extra olives since we all like it that way.   It tastes quite well by itself and doesn't require any accompaniment.  This is an easier version to make compared to the traditional Focaccia.

Note:

You can replace with Spelt flour with alternate flour that you have in your pantry.   Butter milk can be simply replaced with water.
