Almond Spelt Brownie of its class

Originally adapted from versatile vegeterian kitchen and made some tweaks to give my touch.  I loved this recipe since its not too sweet and also not doesnt call for lot of oil or butter.   We have adapted a culture of eating healthy through conscious cooking.

My daughter asked me to post this recipe so that she could refer when she wants to make it!  Every time I make something that she likes, She would ask if I have posted it in my blog.

What you need?

Spelt or whole wheat pastry flour-1/2 cup
Almond meal-1 cup
Cacao powder-1/3 cup
baking soda-1/2 tsp
turbinado sugar-1/4 cup
Raisins or (dates syrup) or Tur. Sugar -1/4 cup
flax egg - 2 (2 Tbsp flax powder with 6 Tbsp of water, mix and rest for 5 mins)
Oil-1/4 cup or butter - 4 Tbsp
almond extract-1/2tsp
vanilla extract-1 tsp

Optional if you would like


Shredded walnuts - 1/2 cup
Choco chips - 1/4 cup

How to make?


1. Prepare flax egg using 2 Tbsp of flax meal and 6 Tbsp of water, leave it aside for about 10 mins.
2. In a bowl, add  spelt flour, cacoa, almond meal, baking soda and mix well.  Add the chopped walnuts and choco chips if using.
3. In another bowl,  add oil, flax egg, vanilla and almond extract,  dates syrup if using and mix well
3. Slowly fold in the liquid to the flour bowl and make sure its all folded in.
4. Line your 9 inch pan with a unbleached parchment paper or oil and spread the mixture over it.
5,  Bake at 300 F for 25-28 min.  Check with a fork and it should be clean.  Time may vary little depending upon your oven.

Let it rest for alteast 30-60 mins before you cut them.   

Tips::

1. Cacao is less processed and more healthier than Cocoa
2. Whole grain Spelt flour including the bran works very well for this recipe.
