Spelt Whole Grain Vanilla Tres-leche Cake

Birthdays are soo special and I have been baking my kids birthday cakes for 9 years.   I would not be baking if my kids had not put up with my endless experiments :-)  I am honest here! We have had brick cakes, collapsed cakes and superlow sweet cakes..but have'nt gone waste except once when I made bitter cake with overloaded baking soda -  followed a recipe posted from ndtv.. 

My little one found this super good Tres leche recipe as the Birthday Girl wanted a Tresleche cake.  My kids dont care if I use whole grain / brown sugar!  All they want is CAKE..   Super Sweet Kidos!

I made 2 8 inches round Vanilla cake and filled with fresh cream and fresh strawberries decorated with Hershey bars which is the birthday girls favorite.   Vanilla frosting was made by my 10 year old!


Going to the recipe!

For one 8-inch round cake

Spelt Whole grain flour - 1.5 cups
Baking soda - 1 Tsp
Baking powder - 1/2 tsp
Salt- 1/2 tsp
Milk - 1 cup
Vinegar  - 2 tsp
Vegetable Oil - 1/3 cup
Turbinado Sugar powdered - 2/3 cup
Vanilla Extract - 1 Tbsp

For the tres-leche syrup:

Sweetened Condensed milk - 3/4 cup
Whole milk - 1 cup

Preheat oven to 350F

1.  Mix spelt flour, baking soda, baking powder , salt well and set aside
2.  Add Vinegar to the milk  and whisk
3.  In another bowl, Add sugar, oil and vanilla extract
4.  Mix all the liquid together and slowly stir them into the flour until you dont see any lumps
5.   Oil the 8 by 8 round pan and pour the mixture on it.   Gently pat the pan on the counter to remove any air bubbles
6.  Bake for about 25 minutes at 350 F.   It might take 2-3 minutes more depending upon the oven temperature.
7. Allow it to cool for about an hour.  In the mean time, keep the tresleche syrup ready.
8. Insert toothpick  1/2 inches apart and pour the tres leche syrup over.  Refrigerate.  After about 2 hours, add more syrup little by little till it absortbs.

It tastes great with 5 hours of cooling in the refrigerator. 

Vanilla Freshcream frosting:

Whipping Cream- 1 pint
Powdered Turbinado sugar-1/2 cup
Vanilla extract - 1 tsp

Mix  freshcream milk, powdered sugar and vanilla extract and whisk at high for about 3-4 minutes till the shape holds!   We like it slightly lesser sweet.   You could increase the sugar in case you have a sweet tooth.

Tips

1. Use unbleached parchment paper lining if desired to line your pan.   You will be stress free
when you remove the cake from the Pan.
2. Reduce sugar on the cake recipe if you don't want to be supersweet.  
3. Use white flour if you want the cake it to super soft.   We loved the whole grain cake.
