Multi Millet Noodles (Sevai)

Millets are small grains and recently made a great comeback into the market. Rice was an occasional treat of our ancestors. They have been eating millet in many forms historically but due to over production and polishing of rice people switched to it completely and millets got lost. There are various ways to include these healthy alternates in our menu.   I have tried so many brands and found only a few to have either complete millets without any maida or all purpose flour.    I like shastha brand of millets which I get in bay area.    I use their finger millet, multi millet, red rice and wheat sevais.   Cooking instructions works as stated on the pack.  Please note that the cooking time is very crucial to get the good texture.

What you need?

Shastha multi millet sevai pack - 1
Salt to taste
Sesame oil - 2 Tbsp

For Dry roasting:
Sesame seeds - 2 Tbsp
Amaranth seeds - 1 Tbsp
Black gram (Urad dal) - 1 Tbsp
Red chillies - 3
Asofoedita (hing) - 1/8 tsp

How to make?

Boil water and add a pinch of salt.  Turn off the stove and add the millet noodles/sevai to it.  Cover it with a lid and leave it for about 8 mins.  Double check the instructions on the cover for perfectly cooking the brand that you get.

Drain the excess water and let it air dry in a colander.

Dry roast the red chillies and black gram till it turns golden.   Toast sesame seeds and amaranth seeds separately on the pan with the lid on, they pop out very quickly. 

Pulse the dry ingredients to a coarse powder texture and add salt to it

Now gently mix the oil  to the air dried sevai and then add the powder mix to it.   It is important to add the oil first and then add the powder so that they can coat evenly. 

Note:

1.  Sauted mixed vegetables is a great alternate
2.  Lemon or coconut is another way to enjoy this delicious food
3.  My other favorite mix to the sevai is onion and purple cabbage with lemon zest.  I will post this recipe soon.
