Buckwheat Rice

Have you ever wondered that the staple diet for Indians to be sure was not just Rice or Wheat.   They had variety of small millets, seeds included in their diet.   I am really glad that Millets are making a great come back but yet to make it completely.    We have forgotten that these millets and seeds have so much of nutrition hidden in them and it gives a nice variety too!

We never feel like eating the same food!  The reason is including few millets, seeds, grains like spelt and sprouted beans all along. 

Today post is about cooking buckwheat to replace Rice.   Its a great replacement for Sambar or spicy foods since typically it has got a earthy flavor to it.   Cooking the right way is also a key. 

I like it best in pressure cooking

1 cup Buckwheat Roasted (Kasha)
3-4 cups of Water

Cook on medium for 3 whistles

Or Rice cooker with the same measurement. 

You could add sambar or mix it with some curries or even make curd rice!
