Peanut/Nut Butter with Real flavor

Home made food has lot of real ingredients and flavorings!   My ingredient reading fever made me to turn into my kitchen to make stuff rather than buying!   I add some spices like cinnamon to give it a nice flavor as well health benefits.   Cloves are known for its antibacterial properties.    

What you need?

Almonds 2 cups
Peanus 2 cups.  (Choose the oil variety which is round and medium size)
Sunflower seeds 1 cup
Sesame seeds 1/2 cup
Spices cinnamon - 1 inch
Cloves - 5-6
Himalayan pink salt - 2 tsp (Adjust)
Jaggery or Molasses - 2 Tbsp




How to make?

Preheat oven to 325F
Spread almonds and peanuts in a separate 9x13 inch glass dishes, can fill 1/3 of the pan.  Don’t overfill the dish,  it will not let the nuts roast evenly.  It will take about 45-50 mins.   
Turn the dish or just use a stainless spatula or silicon spatula to gently turn them over
On the stovetop, heat a medium sized deep pan on medium heat, keep the lid handy, add 1/4 cup of sesame seeds at a time, it will start popping soon, cover with lid and gently shake with the pan handle just to give a toss.   Transfer to a bowl for cooling
On the stovetop, heat a medium sized deep pan on low heat, gently roast the sunflower seeds
To check if the nuts are roasted well, open the oven and carefully scoop a tsp of nuts and leave it out for 2-3 mins.  Once it cools, it should taste crunchy and also the peanut skin should be removable with your finger tips.   If it passes this test, Turn off the oven and remove the dishes out carefully. 
Let it cool for about 20 mins
Crush the peanuts and almonds using your spice jar or food processor.   

I have used a wet grinder to grind the nuts since I don’t have powerful food processor.     You u don’t need to add any oil since the nuts once starts grinding will start leaving out oil.

Add salt, jaggery and spices like cinnamon powder and cloves.   You can grind it to coarse or smooth consistency.

I love this nut butter with Apple or my spelt/kamut khorasan wheat bread.
