Chickpea Veggie Patties for Anytime!



I should say that as a family we love snacks more than food!  We can eat snack for lunch/dinner as well.   This is one of my lunch recipes that my teens and tween also like!

What you need?

Potatoes - 4 small
Carrot/Beans/Purple Cabbage/Peas/Cauliflower - 2 cups
Spices -  Dried Mango powder - 1/2 tsp, Coriander seeds - 1 tsp, Cumin powder - 1/4 tsp
Salt to taste
green chilles- 4  ginger - 1 inch
coconut oil for shallow frying - 3 Tbsp
Crushed peanuts/Nuts - 1/2 cup  (optional)

for Dipping:

Besan/Gorbanzo bean flour - 1 cup
salt to taste

How to make?

Boil potatoes till cooked, not too mushy
Steam vegetables
Add ground ginger and chillies and the spices to the mixture of steamed vegetables and potatoes
Make balls of small lemon size of the above veggie mixture and keep ready
Add 4 Tbsp water to the Besan/Chickpea flour and mix well.  It should be of pancake consistency, not too watery and too thick
Heat a Iron griddle on medium high heat, brush coconut oil all over
Take a veggie mixture ball and flatten it, dip it on the chickpea dip and place over the grid
Turn them over after a min or so,it should be brown as in the pic.

Serve with homemade quick Tomato Ketchup or Mint Coriander dip!
