Unbelievably Healthy Fritters!

I end up making many things based on what I have!   I had some homemade spelt bread which sunk due to excess liquid and typically it gets a make-over.    Be creative with what you have since this is a super versatile dish where you can hide lot of healthy ingredients in!

What you need?

Greens -  I had beet greens - 1 cup chopped
Choice of Veggies - 2 cups ( Carrots, Cauliflower, Broccoli)
1 large Russet Potato (has more fiber)
Beets - 1/4 cup
Sprouts (brown whole moong/Kamut Wheat) - 1 cup
Green chillies - 3 & Ginger - 1 Inch
Salt to taste
Coconut Oil/Sesame Oil - 3 Tbsp
Whole Grain Bread - 6 slices

Seasonings -
Sesame seeds - 2 Tbsp
Mango powder - 1/2 tsp,  Garam Masala powder - 1/4 tsp, Coriander powder - 2 tsp
green coriander leaves - 3 Tbsp chopped

Prep
  • Toast 2 slices of bread in high heat and make a coarse powder in a food processor
  • Boil Potato and steam veggies (carrot, cauliflower and beets) for about 10-12 mins 
  • Make a coarse mixture of sprouts and bread in the food processor


How to make?


  1. In a thick bottom pan, heat 2 tsp of Oil and add sesame seeds, let it pop, add greens and saute it for few mins to let the water evaporate.  Optionally you can include them raw in the mix as well.
  2. In a big mixing bowl, add peeled potato and veggies gently smashed to avoid big chunks and the coarse mixture of sprouts and bread
  3. Add seasonings, ginger-green chilli paste/minced, salt and mix well
  4. Heat an iron griddle on medium heat and brush with oil
  5. Make small balls from the mixture, gently flatten them and pat both sides on the toasted bread crumbs and cook for about 3-4 mins each side.   drizzle small quantity of oil to get a nice crust if you like to.
