Healthy Pumpkin Banana Spice Cake

Pumpkin has high fiber, potassium and helps to protect muscles.   I like the color it adds to my flat breads/yeast and quick breads.   Pressure cooking helps to retain most of the nutrients.  I made this as a healthy snack that can be just warmed before serving.   My kids loved this

What you need?

Spelt Flour 2 cups
Pumpkin pressure cooked 1 cup
Banana small - 2 about 1/2 cup
Chia Gel - 1/4 cup
Apple Cider Vinegar 2 Tbsp
Maple Syrup 1/4 cup
Vanilla Extract - 2 tsp (dry or liquid)
Coconut Oil 1/4 cup
cinnamon / All Spice powder - 1/2 tsp
Craisins - 1/3 cup
Raisins - 1/3 cup
Pecans chopped 1/3 cup
Baking powder 1/2 Tbsp
Baking soda 1/2 tsp
salt - 1/4 tsp



How to make?

1. Cut pumpkin into wedges with the peel intact, pressure cook for about 10 mins, let it cool.  Scoop out the pulp and measure 1 cup

2. Add spelt flour, spice powder, baking powder and baking soda and salt in a bowl.  Mix well.

3. In another glass bowl, add pumpkin puree, banana mashed, vanilla extract, chia gel, apple cider vinegar, coconut oil and maple syrup (room temperature)

4. Fold dry with wet and mix thoroughly.

5. Add dry fruits and chopped pecans and gently mix well.

5.  Bake in 9x11 round or square baking pan for about 23-25 mins on 350F.   Check after 22 mins to see if the top browned.  Keep it for few more mins if the toothpick does'nt come out clean.   

Serve Warm, Add fresh cream on top if you want a treat!   We loved ours just as is!

Notes:

Liquids - In case its cold, keep it on warm water so that it does not solidifies with the coconut oil.
