Kumquat Marmalade!

A kumquat's peel is sweet and tart inside and peels have more health benefits generally than the fruit itself. 

I added roasted green chillies to balance the tartness and use less sugar.  



What you need?

Kumquat - 4 cups
Maple syrup - 1 cup
Green chillies - 4
Salt -1/4 tsp
Sugar - 1/4 cup
Oil 1 tsp

How to make?
  1. Thinly slice the kumquats either using a blender with the slicer blade or using knife.  I did not bother to remove all the seeds, removed whatever was floating on top
  2. Heat oil in a small kadai, add sliced green chillies and turn off
  3. In a saucepan, add sliced kumquats, toasted green chillies, salt, maple syrup and sugar and cook in low flame till everything combines well.  It might take 30 mins or so.  Stir occasionally to prevent burning
