PaniPuri - Homemade
Moments of life defined by some of the fun foods like pani puri. We enjoy home made pani puri once in a while! Honestly, I love the homemade pani than the storebought ones here.. I do prep work over the weekends and enjoy this snack on a week day/evening with family and friends!
I had bought the unfried panipuri packs from India, its made of sabudana and tastes like the finger fritters, it was a good variation and tastes great to eat alone as well!
I love chaat since it can pack so much of sprouted and cooked beans with the yummy pani!
If you do the prep work once, you can use it on so many chaats like bhel, definitely worth the effort and time. It stores very well on the refrigerator for few weeks easily
Prep work!
1. Green chutney
Mint 1 bunch
Coriander greens 2 bunches
gr chillies -10
ginger 2 inches
Salt 1/2 tsp
and Lemon juice -2 Tbsp
water - 2-4 Tbsp
Blend everything smoothly and store in a airtight container
2. Sweet chutney
Dates -1 cup
tamarind 4 medium lemon size
Jaggery 1/2 cup
Saunf - 1 Tbsp
1. Soak dates, tamarind and jaggery seperately.
2. Dry roast Saunf till aroma comes
3. Check for pits on dates and tamarind. Blend dates and transfer to th medium sized sauce pan.
4. Add little water and blend tamarind, Sieve to remove debris. Use a sieve and filter jaggery also to remove dirt. Add tamarind pulp and jaggery to the sauce pan
5. Dry powder the saunf, add it to the mixture with a pinch of salt.
6. Cook on low flames for 30-45 mins, It will splash so occassional stirring is import
3. Sprout Moong, Peas, Kala Chana
Soak the Moong, peas and Kala chana overnight or 8 hours and wash thoroughtly. Tie them in a thin cotton towel and leave it on a warm place on your kitchen counter for 2 days
How to make?
Finally, We have everything to make the great snacks!
Get readymade panipuris and fry the ones like I got.
Boil potatoes (3-4)
Finely chop white onion and fresh coriander
Pressure cook peas and kala chana carefully not to mush them. Remove water from the beans with a colander
In a bowl, add sprouted moong, cooked kala chana, boiled potatoes, onions and coriander, Mix well.
In another bowl, add 4 cups of water, add about 1/2 cup of green chutney and 1/4 cup of sweet chutney. Add 1/4 tsp of kala namak. Mix everything and call tasters, check for tart and spice. If you need more spicy add more green chutney, if yuo need more tart add sweet chutney 1 tbsp at a time. This is a fun exercise we like to do
Pop the top of each puri and fill the stuffing. In a bowl, keep the stuffed puri and dip it on the prepared pani and enjoy the burst of spice and crunch of the puris.
My husband will sit like the pani puri wala on the backyard and we surrounding him with our bowl ready for the next puri of joy !!!
