Spelt Choco Banana Bread
There should not be any guilt in enjoying the perfect snack! This is one of the super moist Banana Bread which is low fat and does'nt use tons of Sugar. It literally took 10 mins of prep. Please note that I have used Cacao powder instead cocoa, the former is less processed than later. I am glad to find it in stores here.
This recipe is adapted from chocolatecoveredkatie!
What you need?
Spelt 2.5 cups
Cinnamon 1/4 tsp
Baking soda 1/2 tsp
Baking powder 1/2 Tbsp
Cacao powder 1/3 cup
Banana 2 cups
Flax egg -2 Tbsp + 6 Tbsp water
Oil 1/4 cup
Sugar 1/4 cup
Nuts -1 cup
Raisins/Craisins - 2/3 cup
Choco chips - 1/2 cup (optional)
How to make?
1. Prepare flax egg by mixing 6 Tbsp of water to 2 Tbsp of flax meal, Leave it alone for 5 mins.
2. Measure all dry ingredients in a bowl
3. I used frozen ones so I had left it over the counter to thaw. Do not blend the bananas, it becomes super juicy. we want mashed bananas for this recipe. Just use a whipper and mash gently. Add oil, sugar, flax egg and mix well
4. Combine wet to dry and fold well. Add nuts, dry fruits and choco chips if using. The mixture should be thick and not batter consistency.
5. Dust 9X5 pan with oil and Bake at 350F for 50 mins to 1 hr.
Enjoy the moist Banana bread.
