Vanilla Tres-Leche Cake

This recipe really works great at our home where we (officially) dont use white flour or white sugar for baking too!   We have the tradition of going to Pizza My heart for birthday celebration usually just with family but this time we could not go.  I was ready to make the order since we all did some research and felt it is quite ok to get the food but then the bday Girl decided to have home-made this time.  We will definitely go once things get back to normal.


We had a great celebration of my daughters 16th Birthday with Kamut Whole wheat pizza for lunch and this cake for dinner, yes thats right.    It was super good in my kids and husband word!  I was proud to make it without any artificial colors/ingredients.  


It was fun making the cake and decorating together.  My younger one helped me with the fresh cream frosting.  She has been making this cake more than me ever. I just volunteered this time to make it since it was for the special sweet 16 birthday of my daughter!

What you need?


Splet Flour 1.5 cups
baking soda.- 1 tsp
baking powder - 1/2 tsp
salt -1/4 tsp
Milk 1 cup-2 Tbsp. (remove 2 Tbsp after rmeasuring a cup if using spelt)
Apple cider vinegar - 2 tsp
sugar - 2/3 cup
vegetable oil - 1/3 cup (dont use coconut oil)
vanilla extract 1 Tbsp



How to make?

  1. Mix milk and apple cider vinegar and keep aside
  2. Preheat oven to 350F
  3. on top of a big bowl, place a sieve and add measure flour, baking soda, salt and baking powder and gently tap to get all the flour to the bowl.  (helps to break clogged/thickened flou/soda). 
  4. In another bowl, add the mixed milk, oil, sugar and vanilla extract.   Use a whisker to mix them thoroughly
  5. Gently fold the liquid into the flour
  6. Pour to a 9 inch round pan lined with unbleached parchment paper if using and gently tap to remove the bubbles
  7. Bake for 27 mins to 30 mins.  Insert a toothpick at the center to check if its still raw, if the toothpick comes out clean then its done.  Also the corners will not be sticking to the pan.   


Prepare the Tres-leche:

1/2 cup condensed milk
1  cups whole milk

Mix the condensed milk to regular whole milk

Preparing the cake:

Let the cake cool for about an hour in a wire rack/refrigerator.   Slice top if uneven and poke holes with a toothpick every few inches all over the cake.

Pour the prepared tres-leche mixture over the cake little by little at time till it absorbs.    Let the mixture soak.  Repeat the process twice and stop when you note that the cake is not absorbing any more.

Note:

I doubled this recipe and made 2 9 inch cake and filled them with fresh cream and strawberries in the middle.  Topped with crushed oreo cookies!
