Whole Wheat Whey/buttermilk Crackers/Cookie
This is one of the healthiest and tastiest crackers that I have ever made. I use leftover buttermilk from making butter for waffles, yeast bread, and these crackers. They are very crispy and can be had with Tea or as a snack for kids.
What you need?
Whole wheat flour - 2.5 cups
Baking soda 1/2 tsp
Baking Powder 1 tsp
salt 1 tsp
Sugar - 2 Tbsp
Whey/buttermilk 1 cup
Coconut oil melted 4 Tbsp
Fennel seeds - 1 Tbsp
How to make?
- Preheat oven to 450F
- Mix whey, melted coconut oil and sugar if using
- In a mixing bowl, measure flour, fennel seeds, salt, baking soda and baking powder and add the liquid little by little and knead to a dough
- Roll the dough on the counter top or any sheet that you might have and cut them into any size you like, you could use cookie cutters
- Lightly dust the cookie sheet with oil and flour and place the cookies over them gently
- Bake for about 10-12 mins turning the sheet in the middle to avoid the corners burn too much.
Note:
1. Use butter instead of oil if you need richer taste
2. Add 2 more Tbsp of sugar if you like more sweeter taste
