Tofu Cheese Cake with No Cheese in a Choco Crust
I have been hesitant to use Tofu in the last few years then after looking at its ancient history decided to use it in moderation. In my opinion, any soy product is better to be used in moderation. I wanted to try some healthy recipes and got some ideas from Chocolate covered Katie!
In this experiment, I learnt that anything you want to do with Tofu, marinating it with other ingredients at-least for 12-24 hrs reduces the Tofu taste on the end product.
What you need?
Almond meal - 1/4 cup
Vanilla - 2 tsp
Salt -1/8 tsp
Maple syrup - 1/4 cup
Blend everything listed under Mix and refrigerate for a day to get the best results, You can make it right away if you don't have the time.
Base:
Marie biscuits - 6-7
Cacao - 2 Tbsp
Salt - 1/8 tsp
Maple syrup - 2 Tbsp
Olive Oil -1 Tbsp
Blend everything listed under base and press it with a masher on the 8 inch round baking pan lined with an unbleached parchment paper
After 12-24 hrs,
Pour the refrigerated tofu mix on top of pressed crust of the 8inch round baking pan
Bake for 22 mins
Enjoy the Cheese cake without the Cheese and a feeling of fulfillment.
