Chai/Tea Whole grain Cookies
I love cookies which are crunchy and not too sweet. It pairs very well with Tea. I like the flaky texture so I was trying with few combinations and got it with Oats.
Spelt/wheat Flour 1 cup
Oats powdered 1.5 cup
Almond flour (optional) - 1/2 cup
Baking powder 1 tsp
Baking soda - 1/2 tsp
Whey/Buttermilk - 1.25 cups
Salt - 1/2 tsp
Sugar - 6 Tbsp + 2 Tbsp in case you need to more sweeter
Coconut/olive oil - 4 Tbsp
Optional
Sesame Seeds- 1 Tbsp
Cumin/Fennel - 2 tsp
How to make?
- Dry roasted sesame seeds, cumin /fennel seeds and keep aside
- In a bowl, add spelt/wheat, oats, roasted seeds, cumin/fennel seeds, almond flour if using and salt along with baking powder and baking soda and mix well
- In a glass jar, Add whey, oil, Sugar and stir to combine
- Add the liquid to the bowl little by little while stirring with a spatula, It should be in cookie dough consistency, neither too wet not too dry.
- Line a baking sheet with unbleached parchment paper
- You could use the Tbsp or ice cream scoop to drop the cookies in the sheet.
- Bake at 400F for 12 mins and at 350 for about 12 mins. You might want to cover the top with aluminium foil after 10 mins of baking if your oven gets too hot.
